Holiday Recipe: Maple Pecan Pie

Yesterday, we celebrated Thanksgiving in the States. Now, being the technically-Southern woman that I am, one of my favorite Thanksgiving treats is pecan pie. Of course, the traditional version is mostly corn syrup and sugar, with eggs for body, and some pecans. Apparently, one of my uncles loves pecan pie, but when he eats it, he picks off the pecans, which invariably float to the top of the filling, and then just eats the sugar-corn-syrup goo underneath.

Appetizing, no? Well, I’m not a fan of corn syrup goo, so when I was developing my own recipe, in addition to adding many more pecans than my traditional family recipe, I also decided to swap out corn syrup for maple syrup. Because even though I’m technically in the South, I’m a Northern lady at heart, right? Anyway, maple syrup also lends a delicious flavor and richness that blends beautifully with the pecans. Here’s my recipe, if you’re in the mood for an American holiday treat.

Maple Pecan Pie
serves 8-12

Crust:

1 cup flour
1 stick butter, cold
1 pinch salt
1/8-1/4 cup cold water

Filling:

2 cups chopped pecans, plus more for the top
6 Tbsp. butter, melted
1 cup dark brown sugar
1 cup Grade B maple syrup
3 eggs
good pinch of salt
2 tsp. vanilla extract

  1. Make the crust by blitzing together the flour, salt, and butter in the food processor until it resembles coarse crumbs. Add the water a little at a time until a dough just forms. Squeeze together into a ball and wrap in plastic wrap. Chill for at least half an hour.
  2. When the dough is chilled, roll it out into a large disk and place in the bottom of a 9″ pie pan. Trim and crimp the edges. Pop back in the fridge to chill while you make the filling.
  3. Preheat the oven to 350. Mix together the melted butter, brown sugar, maple syrup, vanilla, and salt. Whisk in the eggs until smooth.
  4. Scatter the pecans in the pie crust and top with the filling. Arrange more pecan halves on top to make it look pretty. Bake for an hour or so, or until the filling is just set. Cool completely before eating. Can be made a day ahead, chilled overnight, and brought to room temperature before eating. Enjoy!

An Historical Weekend Away

It’s been almost a month since Boyfriend and I decided to take a little long weekend trip to Gettysburg, but I suppose I ought to share some of the photos I took. It was a lovely weekend, with generally nice weather, if a bit warm and sunny some days. I certainly got more sun than usual, even with my sunscreen and parasol at the ready.

We left on a Friday evening from work and did not meet much traffic, so we pulled up to the bed and breakfast a bit after 7 p.m. I had phoned ahead to make sure someone would be there to meet us if we were later than 8, and to save us a plate of food so we wouldn’t have to stop for dinner. But because we arrived before the restaurant closed, we were able to sit down to a nice family-style meal, complete with a glass of local wine for me and beer for Boyfriend. It was a lovely beginning to our weekend, and we got to our cottage relaxed and happy.

The next morning, we had our breakfast in the kitchen room of the main B&B house. It started with porridge, fruit, and tea, and then continued on with a big plate of cheesy eggs and bacon and toasted homemade bread with strawberry jam. The jam was obviously homemade as well, as it tasted incredibly fresh. I don’t generally prefer strawberry jam, but I enjoyed it very much. From there, we spent the day hiking around the historical park, doing plenty of walking. Although the clouds became rather dramatic at times, we did not get rained upon, although our feet were quite sore.

We ended up walking all the way around the north part of the park and back into town, where we got sandwiches for lunch at a little French-themed cafe, and then took the car back to the B&B to rest and clean up before dinner. Dinner was at the historic Farnsworth House, where we ate at the tavern before going on a ghost tour. The tours are given by guides in historical dress, and focus a lot on history, but devote plenty of time to the modern stories of paranormal encounters. I’m not too proud to admit, I felt a few chills while we sat in the haunted attic of the house.

Sunday, after a casual breakfast in our room of sticky buns and blueberry muffins, we spend the morning touring the various wineries and cideries in the area. The countryside was stunning, particularly with the trees so laden with ripening apples. We bought plenty of wine and some cider to tide us over until we can get this year’s batch fermenting.

From there, we went back into town, where we had lunch at an Irish pub. It was rather upscale pub food, and I enjoyed my Scotch egg, fish and chips, and Murphy’s with relish. I was excited to see they offered “a wee bit of fish and chips” and 10 oz. beers for those of us with smaller appetites. Duly fortified, we ventured back into the historical park to walk around the south part of the park. Sadly, the hiking trails are far less well maintained, with the most care taken to keep up the newly paved driving tour route, so we spent much of our time walking along the road instead of braving the somewhat deserted trails. I found it sad that the roads so greatly reduced the number of walkers on the trails, with people preferring to drive up to the landmarks, get out of their cars for a few minutes, and then get back in and continue driving. But we enjoyed our walk, and I got a lovely panoramic view from the observation tower.

Two days of so much walking and sunshine left us ready to head out on Monday after breakfast on the deck of the main B&B house. But it was a lovely weekend!

Christmas Festivities

My Christmas was lovely. It started the evening before, with dinner at my grandparents’ home. Classic appetizers of summer sausage, cheese, crackers, and a platter of shrimp cocktail led into a lovely traditional dinner of roast beef, scalloped potatoes, and a homemade pie for dessert.

My grandmother had received a some lovely flowers and put them in her sun room, along with all her other flowers. The whole effect was lovely and reminded me of old British TV shows where there are always flowers.

Boyfriend and my mother made coffee while I made a cup of tea. Earl Grey with lemon, in a mug my mother was given by a friend who went for a trip on the Queen Elizabeth II.

We opened our gifts and enjoyed the displays of thoughtful generosity. I appreciate that my family does not offer excessive amounts of gifts. It’s just enough for each person to feel thought-of, without too much clutter. After opening gifts, I made scones while my mother cleaned fruit and cooked bacon.

We had a lovely breakfast of fruit, bacon, and scones with cream, jam, and lemon curd. By noon, we were ready to get cleaned up and go visiting. We stopped at a dear friend’s house, where she and her family were opening their gifts. After that stop, Boyfriend and I made the trip up to his family’s house in another city. On the trip, we had the chance to listen to two Christmas radio plays airing on the various local stations we passed along the drive. We arrived, tired but still feeling festive, and wrapped up our Christmas day with a pot roast dinner with his family.
